Our Culinary Arts programs are based on Professional Cook certifications from the Industry Training Authority.

Red Seal

After graduating with a TRU Culinary Arts Certificate, you can work in the industry and get enough hours to challenge the Professional Cook 3 / Red Seal certification. » Learn more

Program requirements

    • Canadian citizen or permanent resident status
    • Grade 10 (Grade 12 preferred) or mature student status

Required Supplementary Documentation

FOODSAFE Certificate — Students may apply and be accepted. However, they must present evidence of successful completion of the FOODSAFE Certificate in the first week of classes.

Next career steps

Certified Chef de Cuisine

Red Seal cooks are eligible to become members of the Canadian Culinary Federation (CCF) and enroll in the Certified Chef de Cuisine program. To enrol you need to be a Red Seal cook for at least five years, and a CCF member to enter their program.

Master Chef

The Canadian Culinary Federation (CCF) in coordination with the Canadian Culinary Institute offers the Master Chef program. It is the highest Chef designation in Canada.
