Teaching Areas: Ed is currently teaching level 3 of the culinary arts program. This is the final level before students venture out into industry. The students are involved in the day to running of Accolades Dining Room here at the university, as well as putting on various functions during the year. Accolades was voted as one of the top 150 restaurants in the “where to eat in Canada” food guide, something we are all very proud of here in the culinary arts program.
Work Related Experience: Ed has had varied experiences in the culinary arts, from working in private clubs and Ski resorts to a 4 ½ year stint in Great Britain working in first country house hotels. It was here he feels that he realized his true passion for food.
Education: Ed did his apprenticeship at the Engineers Club in Vancouver, doing his schooling at PVI in Burnaby BC. He also took an advanced food hygiene course in Great Britain, food safe level one and two in BC and completed the requirements to teach food safe level one. He also completed the Provincial Instructor Diploma program.
To further his knowledge and gain experience Ed would also take most of his vacation time while in Great Britain to do what is referred to as stagiaire, or voluntary unpaid work experience in some of the top restaurants in Britain. He feels this was probably some of the best education he received as far as culinary arts are concerned.
